From Our Kitchen to Yours (3)

Ingredients:

  • 2 lbs Wheat Berry Brittle
  • 1 cup Craisins
  • 1 cup raisins
  • 2 cups mixed nuts
  • 2 cups Peanut M&M's
  • 1 cup Plain M&M's
  • ½ cup sunflower seeds
  • 1 cup almonds

Mix all ingredients in a large bowl.  You can switch any of the above ingredients.  There is a lot of dried fruits available.  Just about anything you like in trail mix, go ahead and add.

Ingredients:

  • 1/2 cup packed brown sugar
  • 1/3 cup peanut butter
  • 1/4 cup corn syrup
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup quick-cooking oats
  • 1/4 cup sunflower kernels
  • 1/4 cup raisins
  • 3 tablespoons toasted wheat germ
  • 3 tablespoon sesame seeds
  • 1/2 cup semisweet chocolate chips
  • 1 cup coconut
  • 3 cups plain popped Wheat Berries

In a small mixing bowl, combine the brown sugar, peanut butter, corn syrup, butter and vanilla. Stir in the oats, sunflower kernels, raisins, wheat germ and sesame seeds. Fold in chocolate chips.

Press into an 8-in. square baking dish coated with nonstick cooking spray. Bake at 350 degrees F for 15-20 minutes or until set and edges are browned.

Cool completely on a wire rack. Cut into bars. You can get creative and again switch the dried fruits and nuts around.  I even exchanged honey for the karo.

Ingredients:

  • 40 large marsmallows
  • 6 to 7 cups plain popped wheat
  • 1/3 cup margarine

Melt margarine and marshmallows in a saucepan or microwave.  Stir well, add wheat berries, stir well, pour into buttered 13x9 pan. Cut into squares. Let cool.

Variations: you can add nuts, rasins, m&m’s, dried fruit or chocolate chips. I get very creative with this one - I have even added skittles!
